Whipped Feta Cheese with Roasted Tomatoes

In the past, you have loved my Whipped Ricotta with Honey & Grapes (click HERE). Hence, today I am sharing a similar recipe made with whipped Feta Cheese and the most flavorful roasted tomatoes. As a result, all your guests will be blown away by this delicious dip with a Mediterranean feel! Therefore, I promise you they will want to leave with the recipe!

Whipped Feta Cheese with Roasted Tomatoes

Ingredients
 

ROASTED TOMATOES

  • 1 1/4 Lbs (560 g) Cherry tomatoes (Washed)
  • 6 Garlic Cloves (Thinly Sliced)
  • 1/2 cup (110 g) Greek Olive oil
  • 1 Tbsp (5 g) Greek oregano
  • Pepper Mill (Season to Taste)

WHIPPED FETA CHEESE

  • 12 oz (350 g) Feta Cheese (I used Fresh Feta)
  • 1/4 cup (55 g) Greek Olive oil
  • 1 tsp (2 g) Greek oregano
  • Pepper Mill
  • barley rusk (Cretan Origin – Small)

Instructions
 

ROASTED TOMATOES PREPARATION

  • Preheat oven to 375F/190C. Place your Pie Mold on the top of your Medium Perforated Baking Sheet. Set aside.
  • Arrange the cherry tomatoes and the thinly sliced garlic into one layer in your Pie Mold. Cover generously with the olive oil, season with Greek Oregano and pepper (To taste). NOTE: Salt is not necessary in this recipe, because Feta is naturally salty. Toss to coat.

  • Roast for 30 minutes at 375F/190C. (Every oven heats differently, monitor your tomatoes from 25 minutes). It is ready when the tomato skin has softens and begins to burst. Set aside to cool down.

WHIPPED FETA CHEESE PREPARATION

  • Place the Feta cheese together with the olive oil and Greek oregano in your Eco Chop. Give it a few pulls to chop it to your liking, it will become creamy. NOTE: If you wish a smoother texture you may use a food processor. Set aside.

ASSEMBLY

  • Scoop your whipped Feta preparation into your service platter. Add the roasted tomatoes on top and drizzle generously the olive oil from the tomatoes. Season with Greek Oregano and pepper (To taste). Serve with Cretan Barley Rusks or a Crusty Bread. Enjoy & Bon Appétit!

  • N.B. Make the whipped Feta ahead and refrigerate up to 2 days.
