Ingredients
PUMPKIN CHIA SEED PUDDING
- 1/2 cup (85 g) chia seeds (1/2 cup)
- 8 oz (225 g) vanilla bean yogurt (1 cup)
- 8.50 oz (240 g) almond milk (1 cup)
- 2.80 oz (80 g) maple syrup (1/4 cup)
- 4.25 oz (120 g) pumpkin purée (1/2 cup)
- 1 Tbsp (6 g) pumpkin pie spice (Homemade recipe HERE)
- 1 tsp vanilla bean paste
SPICED APPLE TOPPING
- 4 apples (Diced)
- 2 Tbsp coconut oil
- 2 tsp pumpkin pie spice (Homemade recipe HERE)
Instructions
PUMPKIN CHIA SEED PUDDING PREPARATION
- In a medium sized bowl, mix all the chia pudding ingredients together until everything is well combined.Cover and place in the fridge to firm up for at least 4 hours or overnight.1/2 cup chia seeds, 8 oz vanilla bean yogurt, 8.50 oz almond milk, 2.80 oz maple syrup, 4.25 oz pumpkin purée, 1 Tbsp pumpkin pie spice, 1 tsp vanilla bean paste
SPICED APPLE TOPPING PREPARATION
- Meanwhile, sauté the diced apples in the coconut oil and pumpkin pie spice.4 apples, 2 Tbsp coconut oil, 2 tsp pumpkin pie spice

- Choose your favorite jars or cups. Add about 4 scoops of chia pudding and top with the spiced apples when you are ready to eat! Autumn Leaves & Pumpkins Please!NOTE: The chia pudding stays well on its own in the refrigerator covered up to 3 days.
