Broccoli and Stilton Soup (Thermomix or not) Bataille Food #119

Ingredients
 

  • 17.63 oz (500 g) broccoli
  • 2 Garlic Cloves (Original Recipe calls for only 1)
  • 1.41 oz (40 g) olive oil
  • 5.30 oz (150 g) sweet onion (Cut in quarters)
  • 3.53 oz (100 g) celery stalks (Cut in pieces | 1 inch | 3 cm)
  • 4.24 oz (120 g) cauliflower (Original Recipe calls for Potatoes)
  • 17.63 oz (500 g) Beef stock (Original Recipe calls for Chicken Stock)
  • 2.82 oz (80 g) Stilton cheese (Crumbled in pieces)
  • 1 tsp (6 g) Sel Gris Mill (Season to Taste)
  • 1/2 tsp (1 g) Pepper Mill (Season to Taste)

Instructions
 

THERMOMIX PREPARATION

  • Place a bowl on mixing bowl lid and weigh broccoli into it. Cut broccoli stalks in pieces (1 inch | 3 cm) and place in mixing bowl. Cut remainder of broccoli head into florets and set aside.
    17.63 oz broccoli
  • Add garlic glove, olive oil, onion, celery and cauliflower to mixing bowl, chop 5 sec/speed 6, then sauté 5 min/212F or 100C/speed 1.
    2 Garlic Cloves, 1.41 oz olive oil, 5.30 oz sweet onion, 3.53 oz celery stalks, 4.24 oz cauliflower
  • Add vegetable stock, reserved broccoli florets, and cauliflower, then cook 10 min/212F or 100C/speed 1.
    17.63 oz Beef stock
  • Add Stilton, salt and pepper then blend 2 min/speed 7. Adjust seasoning to taste.
    2.82 oz Stilton cheese, 1 tsp Sel Gris Mill, 1/2 tsp Pepper Mill

TRADITIONAL PREPARATION

  • Heat the olive oil in a large saucepan, add the sweet onion and garlic. Cook on low for 3 minutes.
    1.41 oz olive oil, 5.30 oz sweet onion, 2 Garlic Cloves
  • Add the celery and cauliflower. Continue cooking for 4 minutes.
    3.53 oz celery stalks, 4.24 oz cauliflower
  • Add the broccoli and stock. Simmer for 15 minutes.
    17.63 oz broccoli , 17.63 oz Beef stock
  • Crumble in the Stilton cheese. Season with Salt and Pepper. Blend until smooth.
    2.82 oz Stilton cheese, 1 tsp Sel Gris Mill, 1/2 tsp Pepper Mill

SERVE!

  • Once your Broccoli and Stilton Soup is ready. Serve it right away with chopped broccoli florets and top and a bit of extra Silton. Bon Appétit!
