Did you know?… To maintain Good Health, the recommendation is to eat a balanced diet constituted of Fresh Fruits and Vegetables everyday.

Therefore, if you have picky eaters at home, I encourage you to bake these delicious muffins for them. But whatever you do, do not tell them there is spinach in it. As a result, they will run out of the kitchen in a flash… I’d like to think some things are best kept secret. Would you agree?

I bake this recipe at home very often and found it some time ago on Joanie’s Blog (@jojo_dans_le_frigo), who is a renowned Dietitian. Of course, you will find her recipe directly on her blog right HERE! Take the time to read her website, it is a true Gold Nugget.

Sweet Spinach Banana Muffins

Do you have a picky eater at home? This Sweet Spinach Banana Muffin recipe is loaded with fresh Baby Spinach, Banana and Lavender Honey.

Ingredients
 

  • 8 Tbsp (115 g) butter (Melted)
  • 2 cups (240 g) whole wheat flour
  • 2 tsp (8 g) baking powder
  • 1/2 tsp (2 g) baking soda
  • 1 Tbsp (8 g) ground cinnamon
  • 1/4 tsp (1.5 g) sea salt
  • 1 egg
  • 1 Banana (Overriped )
  • 1/2 cup (165 g) Lavender Honey
  • 1 tsp (4 g) vanilla extract
  • 3/4 cup (185 g) milk
  • 6 oz (170 g) Fresh Baby Spinach Leaves

Instructions
 

MUFFIN PREPARATION

  • Place the butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowl, whisk together Whole Wheat Flour, Baking Powder, Baking Soda, Cinnamon, and Sea Salt. Set aside.

  • In a blender, add the Egg, Banana, Lavender Honey, Milk, cooled butter and the Fresh Baby Spinach Leaves. Mix until completely pureed.

  • Then, using a spatula carefully fold your Spinach Preparation into your dry preparation. (Do not overmix).

  • Pour your batter into the Flexipan® using the mini ladle. Then, gently spread the batter with your offset spatula, ensuring not to remove the air you incorporated when blending your preparation.

BAKE!

  • Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your muffins from 15min).  It is ready when the toothpick inserted comes out clean .

  • Once your Sweet Spinach Banana Muffins are out of the oven, let them cool down for about 10min. Then, Unmold onto your cooling rack. Enjoy & Bon Appétit!
