Holiday Fruit Cake

What a holiday would be without sharing a Fruit Cake?!…

Although, traditionally it is eaten on Christmas Day, I might have been eating it for the last couple of days 🙂

My Friend Marie from Crete kindly sent me her Family recipe, it is so delicious. She did recommend to add 500gr of Candied Fruits and 300gr of Golden Raisins. Next time I will for sure!

Holiday Fruit Cake

This will be the best cake you will eat this season. There is nothing like a Fruit Cake to Celebrate the holidays.

Bake Time 30 minutes

Total Time 1 hour 40 minutes

Ingredients
 

  • 1 1/4 cup (300 g) Candied fruits
  • 1 1/4 cup (200 g) Golden raisins
  • 4 eggs
  • 1/2 cup (100 g) sugar
  • 1 3/4 cup (220 g) flour
  • 2.5 tsp (12 g) baking powder
  • 8 tbsp (120 g) butter
  • 1 cup Dark Rum or Cointreau

Instructions
 

  • Place the candied fruits and Golden Raisins in a medium size bowl, pour the dark Rum or Cointreau. Let it set for an hour minimum, mixing time to time.
  • Preheat oven at 400F/200C.
  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowl, whisk eggs and sugar together.
  • Then, add the flour and baking powder until incorporated. Then add the melted butter.
  • Add the entire bowl of candied fruits and golden raisins with the alcohol into your mixture, and gently stir with your spatula.
  • Bake for 30 minutes at 400F/200C. (Every oven heats differently, monitor your cake from 25min)
  • Once your cake is out of the oven, let it cool down for about 10min. Then, Unmold, serve and enjoy! Bon appétit!

    Je l’ai fait nessa… et quel régal !!! ce gâteau aux fruits confits est addictif, tellement bon qu’il est bien difficile de se contenter d’un p’tit morceau ! rhooo lala !!!

    • Coucou ma Viviane! Quel honneur d’avoir choisi cette recette pour le 7ème Anniversaire de ton blog! Cela m’a tellement touchée, tu n’as pas idée! Tout comme toi je pensais que la quantité de fruits confits était assez généreuse et je me suis dit “oh mais je ne vais pas mettre tout ça” et en fait oui oui il faut vraiment autant en mettre.
