Holiday Fruit Cake

This will be the best cake you will eat this season. There is nothing like a Fruit Cake to Celebrate the holidays.

Ingredients
 

  • 1 1/4 cup (300 g) Candied fruits
  • 1 1/4 cup (200 g) Golden raisins
  • 4 eggs
  • 1/2 cup (100 g) sugar
  • 1 3/4 cup (220 g) flour
  • 2.5 tsp (12 g) baking powder
  • 8 tbsp (120 g) butter
  • 1 cup Dark Rum or Cointreau

Instructions
 

  • Place the candied fruits and Golden Raisins in a medium size bowl, pour the dark Rum or Cointreau. Let it set for an hour minimum, mixing time to time.
  • Preheat oven at 400F/200C.
  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowl, whisk eggs and sugar together.
  • Then, add the flour and baking powder until incorporated. Then add the melted butter.
  • Add the entire bowl of candied fruits and golden raisins with the alcohol into your mixture, and gently stir with your spatula.
  • Bake for 30 minutes at 400F/200C. (Every oven heats differently, monitor your cake from 25min)
  • Once your cake is out of the oven, let it cool down for about 10min. Then, Unmold, serve and enjoy! Bon appétit!
