Cinnamon Christmas Stars (Bredele)

Baking these Cinnamon Stars Cookies will make your house smell like Christmas. Bonus: They come with no Butter!

Ingredients
 

  • 1 1/3 cups (160 g) all-purpose flour
  • 1 3/4 cups (200 g) almond flour
  • 1/3 cup (60 g) sugar
  • 1/2 cup (100 g) powdered sugar
  • 3 tsp (6 g) ground cinnamon
  • 1/3 cup (80 g) egg whites
  • 1/3 cup (60 g) white chocolate chips

Instructions
 

CINNAMON STARS

  • Pour the all-purpose flour, almond flour, sugar, powdered sugar and ground cinnamon into the bowl of your stand mixer. Mix for 30 seconds with the paddle attachment on. Add the egg whites. Continue mixing until well incorporated, so you can form a ball. About 1 minute. IMPORTANT: Do not overmix the dough.

  • Scrap the dough onto your Roul'Pat® and Roll it, not too thick, not too thin.

  • Then, use the star cutters to cut your dough. Transfer your cookie dough onto your Bonmat® baking sheet.

BAKE!

  • Preheat oven to 350F/180C. Bake for 10 minutes. (Every oven heats differently, monitor your cookies from 8min). It is ready when golden brown around the edge.
  • Once your Cinnamon Christmas Stars are out of the oven, let them completely cool down directly onto your baking sheet.

DECORATION

  • While your Cookies are cooling down, prepare the melted chocolate.
  • Add the white chocolate chunks to your Mini Round Mold and microwave about 30 seconds at a time. Stir in between until melted.
  • Place the melted white chocolate in your pastry bag, and decorate your Cinnamon Cookies to your liking. Let the chocolate set, then slide them onto a serving plate. Enjoy & Bon Appétit!
