Beggar’s Purse French “Crêpes” (Aumonière)

I love making Crêpes and I adore it when Famous French Chef share their favorite recipe. And let me tell you this recipe is extraordinary. You will never miss your Crêpes ever again!

This recipe comes from one of France Favorite Chef, Chef Jean Francois Piège (@jeanfrancoispiege) who shared his recipe during his interview with the French Newspaper Le Point. It is right HERE!

Beggar’s Purse French “Crêpes” (Aumonière)

This French Crêpes recipe from Jean François Piège is Incredible! Why not make your own compote and turn it into Beggar's Purses.

Ingredients
 

FRENCH CRÊPES

  • 7 Tbsp (100 g) butter (Melted)
  • 35 1/4 oz (1 l) milk (Lukewarm)
  • 3 1/4 cups (400 g) all-purpose flour
  • 3 Tbsp (35 g) sugar
  • 1/16 tsp (0.38 g) salt
  • 4 eggs
  • 1 Tbsp (15 g) orange blossom water

BEGGAR'S PURSE FILLING

  • 2 apples (Pink Lady | Peeled | Core removed | Thinly Chopped )
  • 2 oranges (Peeled |Thinly Sliced)
  • 1 cup (245 g) Unsweetened Apple Sauce
  • 1 tsp (5 g) vanilla bean paste

Instructions
 

CRÊPES PREPARATION

  • Place butter in a small sauce pan and heat on medium until melted. Then, continue to heat until there are no more bubbles coming up and the whistling has reduced (about 5min). Pass your brown butter through the sift. Set aside.
  • Place milk in a medium sauce pan and heat on low until lukewarm. Set aside.
  • In a mixing bowl, whisk together flour, sugar and salt. Make a well and add the eggs. Gently start mixing inwards going outwards with your mini whisk. Add the warm milk, a splash at a time while continuing mixing. Finally, add the cool brown butter and orange blossom water. Mix until it is all incorporated.

REST

  • Let your batter rest covered with a plastic wrap at room temperature for about an hour.

COOK!

  • Heat your Pancake pan on Medium 5 minutes prior starting making your "Crêpes" and slightly oil the surface with a kitchen towel.
  • Pour one large scoop of batter in your pan, spreading it over with your spatula.
  • Once one side is cooked, flip it over. Cook it for a few seconds more.

BEGGAR'S PURSE FILLING

  • Place chopped apples, sliced oranges, apple sauce with the vanilla bean paste in a medium sauce pan and heat on low until fruits have softened.

ASSEMBLY

  • When ready place a tablespoon in the center of your crêpe. Then, pull the crêpe together to form a little purse and tie the top of the crêpe with a toothpick. Enjoy & Bon Appétit!
