Baked feta with tomatoes and chickpeas is the kind of dish that makes a few humble ingredients feel incredibly special. Feta softens in the oven while cherry tomatoes burst into a sweet, jammy sauce and chickpeas roast around the edges until golden and crisp. Everything mingles with olive oil and herbs, creating a dish that is both rustic and wonderfully satisfying.

This combination feels deeply Mediterranean, where feta, tomatoes, chickpeas and olive oil have long been everyday staples. Feta itself has been part of Greek food traditions for centuries, traditionally made from sheep’s milk and enjoyed simply with seasonal ingredients. Here, those familiar flavors come together on one pan, with the oven doing most of the work.

Ingredients
 

  • 15 oz (425 g) chickpeas (1 Tin | Drained and Rinsed)
  • 10 oz (280 g) cherry tomatoes
  • 1 Large red onion (Sliced)
  • 1 Tbsp Zaatar Herbs
  • 2 Tbsp olive oil (Divided)
  • 8 oz (225 g) Feta cheese (1 block)
  • Pepper (To Taste)

Instructions
 

  • Preheat your oven to 400℉ (200℃).
  • In a large baking dish, combine the drained/rinsed chickpeas, cherry tomatoes, sliced red onion, za’atar and olive oil. Toss gently to coat.
    15 oz chickpeas, 10 oz cherry tomatoes, 1 Large red onion, 1 Tbsp Zaatar Herbs, 2 Tbsp olive oil
  • Place the block of feta in the center of the dish and sprinkle generously with a little more za’atar. Season everything with a few turns of freshly ground black pepper.
    Finish with a generous drizzle of olive oil.
    8 oz Feta cheese, Pepper

BAKE!

  • Bake for 25 minutes at 400℉ (200℃), until the tomatoes are softened and juicy, the onions are tender, and the feta is warm and lightly golden around the edges.

SERVE

  • Serve warm with crusty bread or warm pita ; spooning the creamy feta, roasted tomatoes, and chickpeas together so every bite gets a little of everything. Enjoy & Bon Appétit!
