Roasted Zucchini with Citrus Tahini Yogurt Sauce
Ingredients
ROASTED ZUCCHINI
- 4 zucchini
- 2 Tbsp olive oil (To Coat the zucchini)
- 1/2 Tbsp Ground Cumin
- 1/2 Tbsp smoked paprika
CITRUS TAHINI YOGURT SAUCE
- 5 oz (140 g) Feta cheese
- 3 oz (85 g) Greek yogurt (@fage)
- 1 oz (30 g) tahini
- 4 Garlic Clove
- 1 lemon zest (From 1 lemon)
- 2 tsp lemon juice
- 1 Tbsp olive oil
- pepper (Season to Taste)
- pine nuts (To Serve)
- parsley flakes (To Serve)
Instructions
ROASTED ZUCCHINI PREPARATION
- Preheat your oven to 400℉ (200℃).Line a large baking sheet with parchment paper and set aside.
- Wash the zucchini under cold water. Discard the ends and cut each zucchini into 4.Transfer them to the prepared baking sheet, sliced face up.4 zucchini
- In a small bowl, add the olive oil, ground cumin and paprika, Mix until combined.2 Tbsp olive oil, 1/2 Tbsp Ground Cumin, 1/2 Tbsp smoked paprika
- Brush the olive oil mixture over the sliced zucchini.
- Roast – For about 25 minutes at 400℉ (200℃), until tender and lightly golden.
CITRUS TAHINI YOGURT SAUCE PREPARATION
- In a food processor, combine the feta cheese, Greek yogurt, tahini, garlic, lemon zest, lemon juice and pepper. Blend. While the processor is running, drizzle the olive oil through the top opening, until whipped to a smooth texture. Set aside until ready to serve.
SERVE!
- Serve the zucchini right out of the oven. Add pine nuts and parsley flakes with the citrus Tahini yogurt sauce on the side. Enjoy & Bon Appétit!
