Old-Fashioned Blueberry Orange Muffins

Ingredients
- 1 cup (80 g) old-fashioned oats (Uncooked | Chopped)
- 1/4 cup (35 g) almonds (Chopped)
- 1 Tbsp (12 g) Demerara sugar
- 1 cup (120 g) whole wheat flour
- 1/2 cup (60 g) all-purpose flour
- 2 tsp (8 g) baking powder
- 1/2 tsp (2 g) baking soda
- 1/4 cup (50 g) Demerara sugar
- 1 cup (240 g) Buttermilk
- 1 Orange (Zest + Juice (1/4 cup) )
- 2 Tbsp (30 g) Canola Oil
- 1 egg
- 1 tsp (4 g) Vanilla extract
- 2 cups (295 g) fresh blueberries
TOPPINGS
- 1/4 cup (35 g) almonds (Chopped)
- 1 Tbsp (12 g) Demerara sugar
Instructions
- Place your Muffin Flexipan® Mold on the top of your medium perforated baking sheet. Set aside.
- Preheat oven at 400F/200C.
BLUEBERRY ORANGE MUFFINS
- Grind oats, almonds and Demerara sugar in a blender or food processor, about 10 seconds. Set aside.
- In a mixing bowl, whisk together all the dry ingredients (Oats/almonds mixture, whole wheat flour, all-purpose flour, baking powder, baking soda and Demerara sugar). Make a well and add all your wet ingredients (Buttermilk, orange juice (1/4 cup), orange zest, Canola oil, egg and Vanilla extract). Mix all to combine. Then, fold your blueberries.
- Pour your batter into the Flexipan® using the mini ladle.
- Grind almonds and Demerara sugar in a blender or food processor, about 10 seconds. And sprinkle it over the muffins.
BAKE!
- Bake for 20 minutes at 400F/200C. (Every oven heats differently, monitor your Muffins from 18min). It is ready when the toothpick inserted comes out clean.
- Once your Old-Fashioned Blueberry Orange Muffins are out of the oven, let them cool down for about 10min. Then, Unmold, serve and enjoy! Bon appétit!
