Apple Sauce & Chocolate Mini Cakes

Today is a very special day for me. It is my Mom’s Birthday.

Every year Mom is with us to celebrate her Birthday. However, this year due to the pandemic it was not safe for Mom to travel and visit us this Winter.

This year, it was not the Biggest Celebration. Just baked a little cake for the occasion, lite a candle and made a wish.

My Friend Marion (Novice en Cuisine) , just made this delicious recipe, and it was perfect to show off my Mini Tablette Flexipan® Tray. Apple Sauce & Chocolate Mini Cakes

A low calorie cake made with apple sauce and covered with a coat of chocolate milk for some added crunch. Perfect for your afternoon snacks.

Ingredients
 

  • 3 eggs
  • 1/3 cup (90 g) apple sauce
  • 1/2 cup (100 g) sugar
  • 1 cup (120 g) flour
  • 1/2 Tbsp (6 g) baking powder
  • 2 Tbsp (30 g) Chocolate spinkles

CHOCOLATE

  • 1/2 cup (100 g) milk chocolate chunks

Instructions
 

  • Preheat oven at 350F/180C.
  • In your mixing bowl, whisk eggs and apple sauce together.
  • Add the sugar.
  • Then, whisk in the flour and baking powder.
  • Once all incorporated, gently mix the chocolate sprinkles.
  • Place your Mini Tablette Flexipan® Tray on the top of your Medium Perforated Baking Sheet.
  • Using your mini Ladle, scoop the batter into each well.
  • Bake for 18 minutes at 350F/180C. (Every oven heats differently, monitor your Mini Cakes from 15min).
  • Once your mini cakes are out of the oven, wait until they have completely cooled down before unmolding them.

CHOCOLATE

  • Place the milk chocolate chunks in your Small Round Flexipan®. Heat in the Microwave for about 30 seconds at a time. Once out of the microwave, using your mini whisk, mix until smooth. Set aside.
  • Gently brush the melted chocolate into each Flexipan® wells which have previously been wiped. And place the mini cakes back on them, pressing gently.
  • Refrigerate and unmold once the chocolate has set.
  • Then, serve and Enjoy! Bon Appétit!
