Old-Fashioned Blueberry Orange Muffins

These whole-grain Blueberry Muffins baked with a hint of Orange will transform your morning breakfast routine!

Ingredients
 

  • 1 cup (80 g) old-fashioned oats (Uncooked | Chopped)
  • 1/4 cup (35 g) almonds (Chopped)
  • 1 Tbsp (12 g) Demerara sugar
  • 1 cup (120 g) whole wheat flour
  • 1/2 cup (60 g) all-purpose flour
  • 2 tsp (8 g) baking powder
  • 1/2 tsp (2 g) baking soda
  • 1/4 cup (50 g) Demerara sugar
  • 1 cup (240 g) Buttermilk
  • 1 Orange (Zest + Juice (1/4 cup) )
  • 2 Tbsp (30 g) Canola Oil
  • 1 egg
  • 1 tsp (4 g) Vanilla extract
  • 2 cups (295 g) fresh blueberries

TOPPINGS

  • 1/4 cup (35 g) almonds (Chopped)
  • 1 Tbsp (12 g) Demerara sugar

Instructions
 

BLUEBERRY ORANGE MUFFINS

  • Grind oats, almonds and Demerara sugar in a blender or food processor, about 10 seconds. Set aside.
  • In a mixing bowlwhisk together all the dry ingredients (Oats/almonds mixture, whole wheat flour, all-purpose flour, baking powder, baking soda and Demerara sugar). Make a well and add all your wet ingredients (Buttermilk, orange juice (1/4 cup), orange zest, Canola oil, egg and Vanilla extract). Mix all to combine. Then, fold your blueberries.
  • Pour your batter into the Flexipan® using the mini ladle.
  • Grind almonds and Demerara sugar in a blender or food processor, about 10 seconds. And sprinkle it over the muffins.

BAKE!

  • Bake for 20 minutes at 400F/200C. (Every oven heats differently, monitor your Muffins from 18min). It is ready when the toothpick inserted comes out clean.

  • Once your Old-Fashioned Blueberry Orange Muffins are out of the oven, let them cool down for about 10min. Then, Unmold, serve and enjoy! Bon appétit!
