French “Crêpes” Made With Almond Milk (DF)

If you have been following me for a while, you must know how much I enjoy the recipes from Delphine (@ohlagourmande). However, something you might not know is that we are both part of a fantastic Facebook Group tests de recettes entre blogueurs. This January 2023 our Group Challenge is to pick “ANY RECIPE” from another blogger who is celebrating their birthday this month. French “Crêpes” Made With Almond Milk (DF)

Looking for a Dairy Free pancake option? You are going to enjoy these delicious Almond Milk French "Crêpes"!

Ingredients
 

  • 6 oz (170 g) almond milk (Lukewarm)
  • 1/2 cup (65 g) all-purpose flour
  • 1 1/2 Tbsp (20 g) sugar
  • 1/16 tsp (0.38 g) sea salt
  • 1 egg
  • 1 1/2 Tbsp (20 g) vegetable oil (Original Recipe uses Butter)
  • 1/2 tsp (2 g) almond extract (My personal addition)

Instructions
 

CRÊPES PREPARATION

  • Place almond milk in a medium sauce pan and heat on low until lukewarm. Set aside.
  • In a mixing bowl, whisk together the all-purpose flour, sugar and salt. Make a well and add the egg. Gently start mixing inwards going outwards with your mini whisk. Add the warm almond milk, a splash at a time while continuing mixing. Finally, add the vegetable oil and almond extract. Mix until it is all incorporated.

REST

  • Cover your batter with a plastic wrap and leave it at room temperature for about 30 minutes.
    • Save

COOK!

  • Heat your Pancake pan on Medium 5 minutes prior starting making your "Crêpes" and slightly oil the surface with a kitchen towel.
  • Pour one large scoop of batter in your pan, spreading it over with your spatula.
  • Once one side is cooked, flip it over. Cook it for a few seconds more. Then, serve. Enjoy & Bon Appétit!
