Deviled Strawberries | Crushed Pistachios

Ingredients
 

  • 32 oz (905 g) strawberries (Washed | Dried)

CREAM CHEESE FROSTING

  • 4 oz (115 g) cream cheese (At Room Temperature)
  • 2 oz (57 g) butter (Softened | At Room Temperature)
  • 1/2 tsp (3 g) sea salt
  • 1 tsp (5 g) vanilla bean paste
  • 6.35 oz (180 g) powdered sugar (Original recipe uses 9.53 oz | 270 g)
  • 2 Tbsp (15 g) raw pistachios (Crushed)

Instructions
 

STRAWBERRIES PREPARATION

  • Wash and dry your strawberries then use a melon scoop or a small pairing knife to carve out a small portion of the center. Be careful not to cut through the bottom of the strawberry. NOTE: You do not need to carve out a lot. Repeat this step for each strawberries then set them aside on a kitchen paper towel.

CREAM CHEESE FROSTING PREPARATION

  • In a mixing bowl, cream the cream cheese together with the butter, using an electric mixer.
    4 oz cream cheese, 2 oz butter

  • Add the sea salt and vanilla bean paste to the mixture.
    1/2 tsp sea salt, 1 tsp vanilla bean paste
    • Save
  • Gradually add the powdered sugar while mixing on low speed. NOTE: Be sure to scrape down the sides and bottom of the bowl as you mix to ensure everything is combining evenly.
    Once the frosting has come together into a nice soft and smooth texture, transfer it to a piping bag fitted with a star tip.
    6.35 oz powdered sugar

ASSEMBLY

  • Dab the center of the strawberries with a kitchen towel. NOTE: This step will allow the frosting to stick better to the fruit.
    Pipe a dollop of frosting into the center of each strawberries.
    Sprinkle the crushed pistachios on top. Repeat these steps for each strawberry. Enjoy & Bon Appétit!
