Simple Summer Salad with Mango Lime dressing

Ingredients
DRESSING/VINAIGRETTE
- 2 Tbsp (30 g) Mango White Balsamic Vinegar
- 3 Tbsp (40 g) Tahitian Lime Oil
- Lavender Salt
- Pepper Mill
SALAD
- 2 tomatoes (Diced)
- 1/2 red onion (Thinly Sliced)
- 1/2 cucumber (Thinly Sliced)
- 8 oz (225 g) baby spinach salad
- 2 oz (55 g) feta cheese (Cubbed)
Instructions
DRESSING/VINAIGRETTE PREPARATION
- First, combine the dressing ingredients (Mango White Balsamic Vinegar, Tahitian Lime Oil, season with Salt and Pepper) in a bowl and whisk together with Mini Whisk until combined.
ASSEMBLY
- Dice your tomatoes. Then, peel and remove the extremities of your red onion. Slice it, using your Mandoline, on the thinnest setting. Do the same with the cucumber as well. Set aside.
- Toss the baby spinach, tomatoes, red onion and cucumber with half of the dressing. Assemble the salad ingredients onto your serving platter. Sprinkle with Feta cheese and drizzle with the remaining dressing. Serve and enjoy. Bon Appétit!
