Light Chicken Fricassée (French Chicken Stew)

I discovered the beautiful blog of Sonia (“La Cuisine de Boomy@soniab57) through her fantastic Facebook Group tests de recettes entre blogueurs. This Group is a GEM and Sonia and her team have been so welcoming from the get-go! This February 2023 our Group Challenge was to pick a “WINTER COMFORT FOOD RECIPE” from another blogger. Hence, I fell in love with Sonia’s recipe because she made a light version of a French Classic. Of course, you will find her recipe right HERE!

Light Chicken Fricassée (French Chicken Stew)

Enjoy this light version of French winter comfort food at home. With this recipe you are guaranteed to delight everyone who will savor it!

Ingredients
 

  • 5 Chicken Thighs
  • 1/2 onion (medium | Chopped)
  • 8 oz (225 g) white mushrooms
  • 8 oz (225 g) shiitake mushrooms
  • 1 Tbsp (14 g) Tuscan Oil
  • Sel Gris Mill (Season to Taste)
  • Pepper Mill (Season to Taste)
  • 3 1/2 oz (100 g) white wine
  • 7 oz (200 g) Chicken Stock (Original Recipe Calls for Water )
  • 1 Tbsp (12 g) sour cream (Light)

Instructions
 

GETTING STARTED

  • Peel and cut your onion in half then into quarters. Transfer it to your Eco Chop. Give it a few pulls to chop it to your liking. Set aside.

  • Wash, clean and slice your mushrooms in halves or quarters depending on their sizes. Set aside.

COOK!

  • Heat a large frying pan on medium-high. Once hot, pour the Tuscan Oil. Add the chicken thighs and cook for 4 minutes until golden brown. Turn and cook the other side for 1 minute.

  • Bring the heat down to medium: Add the chopped onions, mushrooms and season with Salt and Pepper (To taste). Make them sweat for about 8 minutes. NOTE: This will allow the vegetables to soften without taking on any colour.

  • Pour the white wine and stir to dissolve the brown residue stuck to the pan into the sauce. Let it evaporate.
  • Adjust the heat to medium-low, then pour the water and cover with the lid. Let it simmer for 20 minutes.
  • Once your Light Chicken Fricassée is ready, combine the sour cream. Serve hot with your favorite side! Enjoy and Bon Appétit!
