Cucumber Avocado Summer Salad

Cucumber Avocado Summer Salad

Ingredients
DRESSING/VINAIGRETTE
- 1/4 cup (60 g) mango white balsamic
- 2 Tbsp (30 g) lime juice (From 1 Lime)
- 1 Tbsp (15 g) Tahitian Lime Oil
SALAD
- 1/2 red onion (Thinly Sliced)
- 1 English cucumber (Large | Washed | Sliced)
- Lavender Salt
- Pepper Mill (Timut Pepper is Best!)
- 1 avocado (Diced)
- 2 oz (55 g) goat cheese (Crumbled)
Instructions
DRESSING/VINAIGRETTE PREPARATION
- In your mixing bowl, whisk in the mango white balsamic vinegar together with the lime juice and Tahitian Lime Olive Oil. Set aside.
ASSEMBLY
- Peel and remove the extremities of your red onion. Slice it, using your Mandoline, on the thinnest setting. Add it to your dressing preparation.
- Chop the ends of your cucumber and peel some of the skin. then, using your Santuko Knife, slice your cucumber (not too thin, not too thick) and cut it into quarters. Add them to your preparation as well.
