Peel and remove the extremities of your red onion. Slice it, using your Mandoline, on the thinnest setting. Add it to your dressing preparation.
Chop the ends of your cucumber and peel some of the skin. then, using your Santuko Knife, slice your cucumber (not too thin, not too thick) and cut it into quarters. Add them to your preparation as well.
Toss to coat the cucumbers and red onion. Season with Salt and Pepper. Prior to serving, add your diced avocado and crumbled goat cheese. Toss to coat and directly transfer to your serving platter. Enjoy and Bon Appétit!
