Banana Cake by Cyril Lignac

If you are French, you probably have been watching the M6 TV Show “Tous Ensemble En Cuisine” (Cooking All Together) for a while. I remember at the beginning of the confinent in 2019… It was one of my favorite shows to cook along. And most probably it gave me the confidence to cook and bake more at home.

Banana Cake by Cyril Lignac

Ingredients
 

  • 7 tbsp (100 g) butter (Melted)
  • 1 lime (Zest only)
  • 3 bananas (Sliced)
  • 2 eggs
  • 1/2 cup (100 g) sugar
  • 1/16 tsp (0.3 g) salt
  • 1 cup (125 g) flour (Sifted)
  • 1 Tbsp (15 g) flour (Sifted)
  • 1 tsp (5 g) baking powder

Instructions
 

  • Preheat oven at 400F/200C.
  • Place butter in a small sauce pan and heat on medium until melted. Set aside.
  • Using the mini grater to collect the lime zest. Set aside.
  • In a mixing bowl, whisk together the eggs, sugar and sea salt.
  • Continue mixing, add the flour and baking powder.
  • Then, add the cooled melted butter, and the lime zest.
  • Pour your preparation into the Flexipan® and add the sliced bananas on top.
  • Bake for 25 minutes at 400F/200C. (Every oven heats differently, monitor your cake from 20min)
  • Once your banana cake is out of the oven, unmold right away and let it cool down on your cooling rack. Serve, Enjoy & Bon Appetit!
