Authentic British Madeira Cake
Madeira cake is one of the traditional British Cakes I enjoy eating every time I visit home. Although it does not have Madeira in the batter, it is best enjoyed with a glass of Madeira or your favorite tea.

Authentic British Madeira Cake

Ingredients
- 1 cup (225 g) butter (Softened | At Room Temperature)
- 1 cup (200 g) sugar
- 5 eggs (At Room Temperature)
- 1 lemon (Zest only)
- 2 1/2 cups (315 g) all-purpose flour
- 2 tsp (8 g) baking powder
- 1/16 tsp (0.38 g) sea salt
- 1/2 tsp (2 g) sugar
Instructions
- Place your Medium Round Flexipan® Mold on the top of your Medium Perforated Baking Sheet. Set aside.
- Preheat oven to 350F/180C.
CAKE BATTER PREPARATION
- In a mixing bowl, cream the butter and sugar together, until light and fluffy for about 2 minutes on high. Add all the eggs at once, it will curdle that's normal. Add the lemon zest. Then, fold the flour, baking powder, and salt. IMPORTANT: Do not over mix.
- Pour the preparation into your Flexipan®. Dust with sugar.
BAKE!
- Bake for 45 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 35min). It is ready when the toothpick inserted comes out clean.
- Once your cake is out of the oven, let it cool down for about 10min. Then, Unmold, Serve and Enjoy with your Favorite tea or with a glass of Madeira! Bon Appétit!
