Smoked Salmon Mini Muffins
Whenever I buy smoked salmon at the market to prepare them on toasts, the following day, I always have a few slices left in the fridge.
I have always enjoyed making this recipe, because not only it is delicious, but it allows me to clear my pantry of fresh produce as well.
When I became a Flexipan® consumers a couple of years ago, I came across Sonia’s Instagram. I truly love everything she makes. She is also an independent consultant like me, and this is her “Apéro” recipe.

Smoked Salmon Mini Muffins
Ingredients
- 4 eggs
- 3 1/2 oz (100 g) butter (softened)
- 2 oz (50 g) mustard
- Salt/Pepper
- 2 tbsp fines herbs
- 4 1/4 oz (120 g) flour (sifted)
- 1 1/4 tsp (6 g) baking powder
- 4 slices smoked salmon (chopped)
- 3 1/2 oz (100 g) grated cheese
Instructions
- Preheat oven to 350F/180C.
- In the mixing bowl, whisk together eggs, butter, mustard, salt/pepper and herbs.
- Using a spatula, add flour, baking powder, smoked salmon and grated cheese.
- Pour your batter into the flexipan® with the mini ladle.
- Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your mini bites from 15min)
- Once your mini bites are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy!
