Roasted Lemon Acorn Squash
Acorn squash is one of my favorite Winter squash it is so flavorful!

Roasted Lemon Acorn Squash
These Roasted Lemon Acorn Squash are so delicious! Season with fresh herbs and Meyer lemon olive oil to enjoy!
Ingredients
- 2 acorn squash
- 2 Tbsp (30 g) Meyer Lemon Oil
- 1 Tbsp (2 g) Roasted Garlic and Chive Herb blend
Instructions
- Place your Large bonMAT™ on the top of your Large Perforated Baking Sheet.
- Preheat oven to 400F/200C.
SQUASH PREPARATION
- Peel, clean and dice both of your acorn squash, then lay them down on your bonMAT™.
- Drizzle the Meyer lemon oil and sprinkle the roasted garlic and chives Herbs on top.
BAKE!
- Bake for 30 minutes at 400F/200C. (Every oven heats differently, monitor your squash from 25min). It is ready when the squash pieces are fork tender.
- Once your oasted Lemon Acorn Squash is out of the oven, slide them directly onto a serving plate. Enjoy & Bon Appétit!
