Pumpkin Chocolate Chip Oatmeal Bars

Ingredients
 

  • 9 oz (255 g) old-fashioned whole rolled oats
  • 1 tsp (4 g) baking powder
  • 1 tsp (2 g) pumpkin pie spice (Homemade recipe HERE)
  • 1 tsp (2 g) ground cinnamon
  • 1/2 tsp (3 g) sea salt
  • 7.50 oz (213 g) pumpkin purée
  • 1.94 oz (55 g) Unsweetened Applesauce
  • 2.47 oz (70 g) avocado oil (Original recipe uses Coconut oil)
  • 2.82 oz (80 g) Maple syrup
  • 1.76 oz (50 g) light brown sugar (Original Recipe calls for Coconut Sugar)
  • 1 tsp (5 g) vanilla bean paste
  • 4.76 oz (135 g) dark chocolate chips (I used Mini ones)

Instructions
 

PUMPKIN CHOCOLATE CHIP OATMEAL BARS PREPARATION

  • Using a food processor, pulse the oats until they are slightly broken up (about 10 pulses). Transfer to a mixing bowl.

  • Add the baking powder, Pumpkin Pie Spice, ground cinnamon, salt, pumpkin purée, unsweetened applesauce, Maple syrup, avocado oil, light brown sugar, vanilla bean paste and the mini dark chocolate chips. Fold until combined. NOTE: Your preparation will be quite thick, that's normal.
    1 tsp baking powder, 1 tsp pumpkin pie spice, 1 tsp ground cinnamon, 1/2 tsp sea salt, 7.50 oz pumpkin purée, 1.94 oz Unsweetened Applesauce, 2.47 oz avocado oil, 2.82 oz Maple syrup, 1.76 oz light brown sugar, 1 tsp vanilla bean paste, 4.76 oz dark chocolate chips

  • Spoon the mixture into your snack bar tray and using the back of a spoon, spread and press it tightly down into each well. IMPORTANT: Ensuring it is flat and very compact. Add additional chocolate chips on top if you like, I used an additional tablespoon of mini chocolate chips.

BAKE!

  • Bake for 18 minutes at 350F/180C. (Every oven heats differently, monitor your bars from 16 minutes). It is ready when they don't look quite done and barely golden around the edge, the top staying soft. NOTE: Avoid over-baking your bars, they will dry out!

  • Once your Pumpkin Chocolate Chip Oatmeal Bars are out of the oven, let them cool down completely as is in your mold. Then refrigerate for 1 hour for them to set and it's easier to demoled them. Enjoy! Autumn Leaves & Pumpkins Please!

  1. Ma saison préférée moi c’est le printemps ! voir la nature renaitre me met en joie et puis elle annonce la venue d’ingredients dont je raffole. Contrairement a toi les courges n’ont pas ma faveur. J’en mange mais on ne peut pas dire que c’est le regal absolu. Par contre, la vue de ces pumpking m’attire, je pense que je les aurais beaucoup aimés. Merci Nessa, gros bisous

    • C’est vrai que le printemps apporte le renouveau et pour nous à Chicago l’espoir d’avoir un peu plus chaud et que les journées rallongent un peu plus aussi. On a parfois de la neige jusqu’en Avril mais deja en Mai on se sent mieux. Tu vois depuis Juillet on est nombreux à se languir de l’automne on a eu très chaud en juin et la je t’écris il fait tout doux avec 16 degrés. On utlise énormément la courge en cuisine aux états-unis et c’est bon pour le transit ahah Des bisous ma chère Claudine, profites bien de ton weekend, ~Nessa

  2. Super pour de bons petits dejeuners gourmands Nessa. Tes moules sont supers beaux et permettent d’avoir des barres très esthétiques
    PS : je suis en vacances et ne suis pas connectée tous les jours car je ne pars pas avec mon ordi. Ne sois pas surprise si je ne passe pas du coup 🙂
