Parmesan Baskets with Caesar Salad

PARMESAN BASKETS
- 2 cups (200 g) Parmesan Cheese (Grated)
CAESAR SALAD
- 3 cups (145 g) Romaine Lettuce (Washed, Chopped)
- 1 cup (30 g) Croutons (Store bought or homemade)
CAESAR DRESSING
- 2 Garlic Cloves (Chopped)
- 6 oz (180 g) Citrus Coriander Aioli
- 1 Tbsp (4 g) Herbs de Provence Mustard
- 1 tsp (6 g) Anchovy paste
- 1 tsp (6 g) Worcestershire sauce
- 2 Tbsp (30 g) Lemon juice
- 1/2 cup (50 g) Parmesan cheese (Grated)
- Lavender Salt (Season To Taste)
- Pepper Mil (Season To Taste)
Instructions
PARMESAN BASKETS
- Preheat oven at 375F/190C.
- Place your Medium bonMAT™ on the top of your Medium Perforated Baking Sheet.
- Bake for 6 minutes at 375F/190C. (Every oven heats differently, monitor your Parmesan carefully).
- Place your Muffin Flexipan® Tray on the top of your medium perforated baking sheet. Set aside.
- Once your Parmesan Rounds are out of the oven, let them cool down just until you can lift with Polyamide Spatula and transfer to the Muffin Tray shapes. IMPORTANT: You need to work carefully and quickly as it sets rapidely. Set aside.
CAESAR DRESSING / ASSEMBLY
- While your Parmesan Baskets are cooling, prepare the dressing.
- Use the Mini Herb Chopper to thinly chop the garlic. Set aside.
- Place all the dressing ingredients directly in the Eco Chop and give it a few pulls to emulsify the dressing. Taste and adjust to your liking.
- Just before service, in a mixing bowl, toss your Romaine Lettuce, with the croutons and your caesar salad dressing.
- Place your Parmesan Baskets onto each plate. Then, scoop your Caesar Salad in each one of them. Enjoy and Bon Appétit!
