Once your Parmesan Rounds are out of the oven, let them cool down just until you can lift with Polyamide Spatula and transfer to the Muffin Tray shapes. IMPORTANT: You need to work carefully and quickly as it sets rapidely. Set aside.
CAESAR DRESSING / ASSEMBLY
While your Parmesan Baskets are cooling, prepare the dressing.
Place all the dressing ingredients directly in the Eco Chop and give it a few pulls to emulsify the dressing. Taste and adjust to your liking.
Just before service, in a mixing bowl, toss your Romaine Lettuce, with the croutons and your caesar salad dressing.
Place your Parmesan Baskets onto each plate. Then, scoop your Caesar Salad in each one of them. Enjoy and Bon Appétit!
