Mascarpone Apple Sponge Cake
Mascarpone Cheese brings so much fluffiness when baking a cake, that I hope the Supermarkets will never run out!

Mascarpone Apple Sponge Cake

Ingredients
- 3 eggs
- 3/4 cup (150 g) sugar
- 1 Tbsp (12 g) Vanilla sugar
- 8 oz (225 g) mascarpone
- 1 1/4 cups (155 g) flour
- 2 1/2 tsp (12 g) baking powder
- 3 Apples (Peeled & Sliced)
Instructions
- Preheat oven at 350F/180C.
- In the bowl of your stand mixer beat the eggs with the sugar and vanilla sugar for about 6 min (Medium speed). Until light and fluffy.
- Add the Mascarpone cheese. Continue beating for another 4 min (Medium speed).
- Then, add your flour and baking powder. Mix until combined (Do not overmix).
- Place your Round Flexipan® Mold on the top of your medium perforated baking sheet.
- Peel and remove the core from each apple. Then, slice them or cut them into small quarters. Set aside.
- Pour your batter into the Flexipan®, then lay your apples into one level without sinking them.
- Bake for 30 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 30min)
- Once your Mascarpone Apple Sponge Cake is out of the oven, let it cool down for about 10min. Then, Unmold directly onto your cooling rack. Sprinkle some Cofectioners' Sugar on top. Serve and Enjoy! Bon Appétit!
