Harry Potter | Sorting Hat Cupcakes

Ingredients
 

SORTING HATS (12) (DAY PRIOR)

  • 1.06 oz (30 g) butter (Softened | At Room Temperature)
  • 2 oz (80 g) cream cheese (Softened | At Room Temperature)
  • 1/4 tsp (1.25 g) vanilla bean paste
  • 1/16 tsp (0.38 g) sea salt
  • 4.23 oz (120 g) powdered sugar
  • 1.23 oz (35 g) black cocoa powder (Unsweetened)
  • 1.06 oz (30 g) heavy cream
  • 6 Oreo Cookies (Filling removed)
  • 6 oz (170 g) dark chocolate chips (Melted)
  • 1 tsp (4 g) coconut oil

CHOCOLATE MUFFINS (12)

  • 6.70 oz (190 g) all-purpose flour
  • 1/2 Tbsp (6 g) baking powder
  • 4.23 oz (120 g) granulated sugar
  • 2.29 oz (65 g) unsweetened cocoa powder
  • 1 tsp (2 g) ground cinnamon
  • 1/2 tsp (1 g) pumpkin pie spice (Best Homemade Recipe, HERE!)
  • 1/8 tsp (0.75 g) sea salt
  • 3 eggs (Large)
  • 9.35 oz (265 g) sour cream
  • 5.82 oz (165 g) vegetable oil
  • 1 tsp (4 g) vanilla bean paste
  • 6 oz (170 g) dark chocolate chips

CINNAMON FROSTING

  • 4 oz (115 g) butter (Softened | At Room Temperature)
  • 8 oz (226 g) cream cheese (Cold)
  • 1 tsp (5 g) vanilla bean paste
  • 12.70 oz (360 g) powdered sugar
  • 1 tsp (2 g) ground cinnamon
  • food coloring (Red: Gryffindor | Sunflower: Hufflepuff  | Blue: Ravenclaw | Green: Slytherin)
  • 2 tsp (2 g) black cocoa powder
  • gold food dust (For decorating)

Instructions
 

SORTING HATS (12) PREPARATION (DAY PRIOR)

  • In a mixing bowl, add the softened butter together with the cream cheese, vanilla bean paste and sea salt. Beat on high until light and fluffy, about 5 minutes. Add the powdered sugar and the black cocoa powder a little at a time until combined. Then, add in the heavy cream and continue to whip the frosting on high speed until light and fluffy. Transfer to a piping bag and cut off a bit of the tip. Set aside.
    1.06 oz butter, 2 oz cream cheese, 1/4 tsp vanilla bean paste, 1/16 tsp sea salt, 1.23 oz black cocoa powder, 4.23 oz powdered sugar, 1.06 oz heavy cream

  • Carefully remove the filling from 6 Oreos. Pipe the chocolate frosting into the center of each Oreo to resemble the sorting hat. Move your piping hand in a very small circle to build up the frosting. NOTE: It's great to practice on the plate until you get the hang of it. Repeat with the remaining Oreos. Freeze for 4 hours minimum.

  • Once the hats are frozen, place them on a wire rack on top of parchment paper. Melt the chocolate and coconut oil together, once cooled spoon the chocolate over the hats until completely covered. Refrigerate overnight.
    6 oz dark chocolate chips, 1 tsp coconut oil

CHOCOLATE MUFFINS (12) PREPARATION

  • Place your Muffin Tray on the top of your medium perforated baking sheet. Preheat oven to 350F/180C.
  • In a mixing bowl, whisk together the dry ingredients (All-purpose flour, baking powder, Cocoa powder, sugar, cinnamon, pumpkin pie spice, and sea salt). Make a well, add the eggs, sour cream, vegetable oil and vanilla bean paste. Mix until combined, then fold the chocolate chips.
    6.70 oz all-purpose flour, 1/2 Tbsp baking powder, 4.23 oz granulated sugar, 2.29 oz unsweetened cocoa powder, 1 tsp ground cinnamon, 1/8 tsp sea salt, 3 eggs, 9.35 oz sour cream, 5.82 oz vegetable oil, 1 tsp vanilla bean paste, 6 oz dark chocolate chips, 1/2 tsp pumpkin pie spice

  • Scoop the batter into each well of your Muffin Tray.

BAKE!

  • Bake for 12 minutes at 350F/180C. (Every oven heats differently, monitor your Muffins from 10 minutes) It is ready when the toothpick inserted comes out almost clean or with little to no crumbs.

  • Once your Chocolate Muffins are out of the oven, let them cool down for about 10 minutes before unmolding then onto your cooling rack. NOTE: I like to bake mine the day prior so I can do the frosting the day of.

CINNAMON FROSTING PREPARATION

  • In a mixing bowl, add the softened butter and beat on high until light and fluffy, about 5 minutes. Mix in the cold cream cheese. Then, add the powdered sugar a little at a time until combined. Continue to whip the frosting on high speed until light and fluffy.
    4 oz butter, 8 oz cream cheese, 1 tsp vanilla bean paste, 12.70 oz powdered sugar, 1 tsp ground cinnamon

  • Transfert about 1 oz | 28 g of the cinnamon frosting into 4 bowls adding the food coloring into each one (Red: Gryffindor | Sunflower: Hufflepuff  | Blue: Ravenclaw | Green: Slytherin). NOTE: To get a deepen color, add 1/2 tsp of black cocoa into each bowl. Mix until combined and transfert to 4 piping bags and cut off a bit of the tips.
    food coloring, gold food dust, 2 tsp black cocoa powder

ASSEMBLY

  • Remove the center of each muffin using a small knife. Fill 3 muffins with each of the frosting color. (Red: Gryffindor | Sunflower: Hufflepuff  | Blue: Ravenclaw | Green: Slytherin).

  • Transfer the remaining cinnamon frosting to a piping bag with the star tip. Pipe frosting on top of the cupcakes. Spray the gold food dust to give it a shine if you like.

  • Carefully place a sorting hat on top of each cupcake, then serve! Bite into one cupcake to reveal the hidden house colour and to be sorted! Enjoy Wizards ; Magic always happens in the kitchen!

  • N.B. These cupcakes are best enjoyed the day of. However, you can store the muffins wrapped at room temperature and the frosting in the refrigerator up to 3 days for assembly later.
