Guacamole & Cherry Tomato Muffins
I love Guacamole!
Lately, whenever I go to the groceries, I’ll get a fresh made one from the fridge section. Of course, it is not as nice as making my own, but it is quite satisfying to be able to eat it right away!
Also, because the jar is always so big and I can only eat so much Guacamole at a time… I like to make this recipe from Novice en Cuisine, in order to use the last ounces without having it going bad the following day.

Guacamole & Cherry Tomato Muffins
As an apéritif, Guacamole is mostly served with chips. You will be surprised how delicious it can be when baked into a savory muffin.
Ingredients
- 3 eggs
- 4 oz (120 g) guacamole
- 1 oz (30 g) butter (melted)
- 4 oz (120 g) flour (sifted)
- 1.5 tsp (6 g) baking powder
- 1 tbsp bouquet garni herbs (LINK under equipment)
Instructions
- Preheat oven at 350F/180C.
- Place butter in a small sauce pan, and heat on low until melted. Set aside.
- In a mixing bowl, whisk together eggs and guacamole.
- Slowly, add the melted butter.
- Then, combine flour and baking powder together. Whisk until smooth.
- Pour your batter into the flexipan® with the mini ladle.
- Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your muffins from 15min)
- Once your muffins are out of the oven, let them cool down for about 5min. Then, Unmold, Serve and Enjoy!
