Now that it is December, I do not mind sharing with you this delicious Gingerbread Man Cookie recipe from one of my Favorite French Chef!

Easy Gingerbread Man Cookies (Bredele 2021)

December is here! Why not snack away on a delicious Gingerbread Man! These are super easy to make and so flavorful. Everyone will love them!

Ingredients
 

GINGERBREAD MAN COOKIES

  • 9 tbsp (125 g) Butter (Softened | At Room Temperature)
  • 1 Egg
  • 1/3 cup (75 g) Dark Muscovado Sugar
  • 1/4 cup (50 g) Sugar
  • 1 tbsp (20 g) Molasses (Original Recipe calls for 2tbsp of Molasses )
  • 1 tbsp (20 g) Lavender Honey
  • 2 1/4 cups (280 g) all-purpose flour
  • 2 tbsp (15 g) Ground Cinnamon
  • 1 tbsp (5 g) Ground Ginger
  • 1 1/2 tsp (3 g) Ground Cloves
  • 1/2 tsp (1 g) Ground Nutmeg
  • 1/4 tsp (1.5 g) Sea Salt
  • 1/2 tsp (2 g) Baking Soda

VANILLA ICING

  • 1 1/2 cups (180 g) powdered sugar
  • 1/2 tsp (2 g) vanilla extract
  • 1 tsp (10 g) corn syrup
  • 2 tbsp (30 g) bottle water
  • 1/8 tsp (0.75 g) sea salt

Instructions
 

GINGERBREAD MAN COOKIES

  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowlbeat together the egg, both sugars, molasses, lavender honey and cooled melted butter.
  • Mix in the all-purpose flour, all the spices (cinnamon, ginger, gloves, nutmeg), sea salt and baking soda.
  • Scrape the dough out onto the Roul'Pat™ and divide it half. Cover with a plastic wrap and refrigerate for two hours (minimum 30min).

ASSEMBLY

BAKE!

  • Preheat oven at 350F/180C.
  • Preheat oven to 350F/180C. Bake for 10 minutes (Every oven heats differently, monitor your cookies from 8min). It is ready when golden brown around the edge.

  • Once your Easy Gingerbread Man Cookies are out of the oven, let them completely cool down directly onto your baking sheet.

VANILLA ICING

  • While your Cookies are cooling down, prepare the vanilla icing.
  • In a medium bowl, whisk together powdered sugar, vanilla extract, corn syrup and sea salt. Then, add 2 tbsp of spring water. Mix until combined. IMPORTANT: Add 1/2 tsp of water at a time to find the right balance.
  • Fill your Pastry Bag with the icing. Cut the tip to the desired thickness of design, and pipe away.
  • Let them dry for an hour or so. Then, slide them onto a serving plate. Enjoy & Bon Appétit!
