Apple Cider Donut Cakes with Cider Glaze

Apple Cider Donut Cakes with Cider Glaze

These Apple Cider Donut Cakes will make your entire house smell like Autumn. Bonus: The Cider Glaze on top is Incredible!

Ingredients
 

APPLE CIDER REDUCTION

  • 1 cup (235 g) apple cider (Reduced to 1/2 cup)

APPLE CIDER DONUT CAKES

  • 1 egg
  • 1/4 cup (50 g) sugar
  • 1/3 cup (65 g) greek yogurt
  • 1/4 cup (55 g) vegetable oil
  • 1 tsp (5 g) vanilla bean paste
  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 tbsp (6 g) baking powder
  • 1 1/2 tsp (3 g) ground cinnamon
  • 1/4 tsp (0.5 g) ground ginger
  • 1/8 tsp (0.25 g) ground all spice
  • 1/8 tsp (0.25 g) ground nutmeg
  • 1/8 tsp (0.75 g) sea salt

APPLE CIDER GLAZE

  • 1 cup (120 g) powdered sugar
  • 1/2 tsp (1 g) ground cinnamon
  • 2 tbsp (30 g) apple cider (From Reduced Cider)
  • 1/2 tbsp (8 g) milk

DECORATION

  • 1/4 cup Sprinkles (From Sprinkle Pop)

Instructions
 

APPLE CIDER REDUCTION

  • Place your Small Round Mold on the top of a microwavable plate. Pour the apple cider and cover with Octagonal Bonmat. Microwave on high for 8 minutes. It is ready once the apple cider has reduced by half (about 1/2 cup or so). Set aside to cool down.

APPLE CIDER DONUT CAKES

  • Preheat oven to 400F/200C. Place your Donut Flexipat® Tray on the top of your Medium Perforated Baking Sheet.
  • In a mixing bowl, beat the egg and sugar together with your hand mixer for 3 minutes on medium high speed. Add the Greek yogurt, vegetable oil and cooled reduced apple cider. Then, combine the all-purpose flour, baking powder, spices (cinnamon, ginger, all spice, nutmeg) and sea salt.
  • Fill your Pastry Bag with the batter and carefully pipe it into each well of the Flexipat®.

BAKE!

  • Bake for 13 minutes at 400F/200C. (Every oven heats differently, monitor your Donuts from 10min). It is ready when the toothpick inserted comes out clean.

  • Once your Donut Cakes are out of the oven, let them cool down for about 10min. Then, unmold onto your cooling rack.

APPLE CIDER GLAZE

  • In a bowl, whisk together powdered sugar, cinnamon, reduced apple cider, and Milk. IMPORTANT: Add 1/2 tsp of milk at a time until desired consistency.
  • Once your Apple Cider Donut Cakes have completely cooled down, dip them one at a time into the apple cider glaze. Decorate with sprinkles .Enjoy & Bon Appétit!
