Olive Oil Cake with Roasted Balsamic Strawberries

Olive Oil Cake with Roasted Balsamic Strawberries

This Strawberry Cake is incredible: The Roasted Balsamic Strawberries bring so much flavor and taste, it is truly delicious!

Ingredients
 

ROASTED BALSAMIC STRAWBERRIES

  • 1 Lb (455 g) strawberries (Washed | Leaves removed | Sliced)
  • 1 1/2 Tbsp (25 g) Strawberry Balsamic
  • 1 1/2 Tbsp (30 g) Lavender Honey
  • 1 tsp (5 g) vanilla bean paste

OLIVE OIL CAKE

  • 2 eggs
  • 1/2 cup (100 g) sugar
  • 1/2 cup (100 g) Greek yogurt
  • 1/3 cup (75 g) olive oil
  • 1 cup (125 g) all-purpose flour
  • 2 tsp (8 g) baking powder

Instructions
 

  • Preheat oven to 350F/180C.

ROASTED BALSAMIC STRAWBERRIES PREPARATION

BAKE YOUR STRAWBERRIES!

  • Bake for 20 minutes at 350F/180C. Stirring once at about 10 minutes. (Every oven heats differently, monitor your strawberries from 15min).

  • Once your Roasted Balsamic Strawberries are out of the oven, let them cool down completely in the mold while preparing and baking your cake.

OLIVE OIL CAKE PREPARATION

  • Place your Fluted Loaf Flexipan® Mold on the top of your Small Perforated Baking Sheet. Set Aside.
  • In your mixing bowl, beat together the eggs and sugar until light and fluffy (about 2 minutes on medium high speed). Add your Greek yogurt and Olive oil. Then, slowly incorporate the flour and baking powder. Fold your roasted balsamic strawberries (Keep a heaping spoon to the side for decoration).

  • Pour your batter into the Flexipan®.

BAKE YOUR CAKE!

  • Bake for 45 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 40min).  It is ready when the toothpick inserted into the center comes out clean.

  • Once your Olive Oil Cake is out of the oven, let it cool down for about 10min. Then, Unmold, Serve and Enjoy! Bon Appétit!
