Watching Kashmiri Pink Tea slowly turn that soft, dreamy blush, feels almost like kitchen magic — simple ingredients, a little patience, and suddenly your pot transforms into the prettiest rosy brew.

This is a true comfort drink. The kind you hold with both hands. Creamy, gently salted, and deeply soothing, it is the type of tea that warms you from the inside out — especially on cold mornings or quiet afternoons when you just need something grounding and cozy.

Known as Noon Chai in Kashmir, this traditional tea is made with green tea leaves, baking soda, milk, and water. And here’s the beautiful part: The pink color isn’t artificial at all. It’s science! The baking soda slightly changes the pH of the tea, reacting with natural compounds (called catechins) in the green tea leaves. When milk is added and the tea is aerated while simmering, that deep reddish base softens into its signature rosy pink.

Ingredients
 

  • 2 Tbsp kashmiri green tea leaves
  • 1/8 tsp (0.5 g) baking soda
  • 16 oz (450 g) spring water (Cold)
  • 16 oz (450 g) spring water (Ice-cold)
  • 1/2 tsp (1 g) ground cardamom
  • 16 oz (450 g) milk (Warm)
  • Salt or granulated sugar (To Taste)
  • dried rose petals (For garnish)
  • Crushed pistachios (For garnish)

Instructions
 

KASHMIRI PINK TEA PREPARATION

  • To a large sauce pan, add the Kashmiri tea (loose leaves), the baking soda and the first 16 oz (450 g) of cold water.
    Bring to a boil on a medium heat.
    Bring the heat to medium-low and let it simmer for 10-15 minutes, stirring often, until the water has reduced by half and turns deep burgundy.
    2 Tbsp kashmiri green tea leaves, 1/8 tsp baking soda, 16 oz spring water

  • Add the second 16 oz (450 g) of ice-cold water and whisk vigorously to aerate.
    NOTE: This is essential to create the oxidation for the pink color development.
    Add the ground cardamom. return to a boil on a medium heat.
    Bring the heat to medium-low and let it simmer for 5 minutes, stirring often.

  • Strain the tea concentrate through a fine sieve into a clean saucepan.

  • Slowly pour in the warm milk, the pink hue will appear while stirring.
    Add salt and / or sugar to taste. Let it simmer gently and serve hot.

  • Once your Kashmiri Pink Tea is ready, garnish with crushed pistachios and dried rose petals (They will float). Enjoy!

Le “Kashmiri Pink Tea” (aussi appelé Noon Chai) est un thé traditionnel emblématique du Cachemire, reconnaissable par sa superbe couleur naturellement rosée et à sa texture onctueuse, légèrement salée. Préparé avec du thé vert, une pointe de bicarbonate de soude et du lait, cette recette authentique est parfaite pour un matin tout en douceur, pour les soirées de Ramadan ou pour accompagner un après-midi d’hiver bien au chaud.     • Hi Tandy yes the base is green tea. You have to use rolled green tea leaves and baking soda and the rest becomes alchemy! If you like chai teas this one is really really nice and subtle. Then up to you to make it sweetened to your liking 🙂 Enjoy, ~Nessa

    • Hello Chantal, tu n’as pas besoin de roses séchées si tu ne souhaites pas avoir de topping dessus. Il faut juste du thé vert roulé et du bicarbonate, le reste c’est la science qui s’en charge 🙂 Des bisous, ~Nessa

    • Coucou ça fonctionne bien avec un thé vert qui a été roulé. La réaction est grace à l’ajout du bicarbonate donc tu devrais pouvoir le faire sans aucun problème à la maison lorsque tu souhaites un moment cocooning 🙂 Bisous, ~Nessa
