Edible Green Moss | Halloween
Equipment
Ingredients
- 2 eggs (At Room Temperature)
- 0.85 oz (24 g) sugar
- 2.12 oz (60 g) glucose syrup
- Food Colorant (green, blue, yellow and brown)
- 1.76 oz (50 g) all-purpose flour
- 0.36 oz (10 g) baking powder
Instructions
- Place your Medium Round Mold on top of a microwavable plate. Set aside.
EDIBLE GREEN MOSS PREPARATION
- In a mixing bowl, use a hand-held mixer to beet the eggs and sugar at maximum speed until an airy foam forms.2 eggs, 0.85 oz sugar
- Add the glucose syrup and beat for about two minutes. The mixture should become fluffy and noticeably increase in volume. Add the food colorant to achieve an earthy green color.2.12 oz glucose syrup, Food Colorant
- Mix the all-purpose flour together with the baking powder and add it to the bowl, sifting it through a sieve. Gently fold the batter by shaking your spatula as you come up through the preparation to preserve the air bubbles.1.76 oz all-purpose flour, 0.36 oz baking powder
- Pour the preparation into your Medium Round Mold.
COOK!
- Place mold in the microwave. If your microwave power is 800W, bake them for about 1.5 minutes. IMPORTANT: However, focus more on the consistency rather than the time, as baking time may vary based on microwave power and the size of mold you use. The surface should be dry and slightly springy when pressed.
- After cooking, take out the mold and let it cool, upside down on a cooling rack for 10-15 minutes. When ready peel the sponge of your mold. NOTE: It's sticky, that's perfectly normal!
- Peel and break the sponge to create that moss effect on your desserts and pastries. Enjoy! "BONE" Appétit & Happy Halloween!
- N.B. Storage is best when placed in an airtight container and can be refrigerated up to 3 days.
- NOTE: Color it in pink to create a beautiful coral!
