Easy Banana Cake

I am sharing with you today a simple Banana Cake Recipe. The texture is wonderful and has much less calories than in a Banana Bread!

Easy Banana Cake

There is something delicious about this Banana Cake: It is light like a sponge and has much less calories than in a Banana bread 🙂

Ingredients
 

  • 2 eggs
  • 1/2 cup (100 g) sugar
  • 2 tsp (10 g) Vanilla Extract
  • 1/2 cup (120 g) Skyr yogurt
  • 1/3 cup (75 g) Vegetable oil
  • 1 1/4 cup (150 g) flour (Sifted)
  • 1 1/4 tsp (6 g) baking powder
  • 3 bananas (2 Diced + 1 Sliced for Decoration)

Instructions
 

  • Preheat oven to 350F/180C.
  • In the bowl of your stand mixer beat the eggs with the sugar and vanilla extract for about 10 min (Medium speed).
  • Then, whisk in the yogurt, vegetable oil, flour and baking powder.
  • Finally, gently stir the diced bananas (2 Bananas).
  • Place your Loaf Flexipan® Mold on the top of your Medium Perforated Baking Sheet.
  • Pour the batter into your Flexipan®. Decorate the top with your sliced Banana.
  • Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 20min).
  • Once your Banana Cake is out of the oven, wait about 10 minutes before unmolding directly onto your serving plate. Enjoy & Bon Appétit!
