Dairy-Free Key Lime Coconut Cake

Dairy-Free Key Lime Coconut Cake

Ingredients
COCONUT CAKE
- 2 1/2 cups (310 g) all-purpose flour
- 2 tsp (8 g) baking powder
- 1 cup (200 g) sugar
- 1/2 tsp (3 g) sea salt
- 2 eggs
- 1 cup (225 g) coconut milk
- 5 Tbsp (70 g) coconut oil (Melted)
- 1 tsp (5 g) vanilla bean paste
- 3 key limes (Use 2/3 Zest only | Keep the Juice for the Glaze)
KEY LIME GLAZE
- 1 1/4 cups (150 g) powdered sugar
- 2 Tbsp (30 g) key lime juice (Juice from 1 lime)
- 2 tsp (4 g) key lime zest (Zest from 1 lime)
Instructions
- Place your Twisted Crown Flexipan® Mold on the top of your Medium Perforated Baking Sheet. Set Aside.
- Preheat oven to 350F/180C.
COCONUT CAKE PREPARATION
- In a mixing bowl, whisk together all the dry ingredients (all-purpose flour, baking powder, sugar and salt). Make a well and add the eggs. Gently start mixing inwards going outwards with your mini whisk. Add the coconut milk, coconut oil, vanilla bean paste and key lime zests. Mix until it is all incorporated.
- Pour your preparation into the Flexipan®, flatten the batter if necessary with your spatula.
BAKE!
- Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your cakes from 22min). It is ready when the toothpick inserted into the center comes out clean.
- Once your Key Lime Coconut Cake is out of the oven, let it cool down for about 10min. Then, unmold onto your serving plate.
KEY LIME GLAZE PREPARATION
- When your Key Lime Coconut Cake has completely cooled down, prepare the Key Lime Glaze.
- In a mixing bowl, whisk together the Powdered sugar with the key lime Juice and zest using your Mini Whisk. Pour it right way on your cake with a Spatula or using a Pastry bag. Decorate to your liking and Enjoy! Bon Appétit!
