Apple Butter Financiers
If I could, I would eat Apple Butter year round. It is so delicious and truly tastes like Christmas.
Whenever I am in need of a new Financiers recipe, I always look up at Lauren’s recipes because she has so many in her archives. These were such a success, and were gone in one afternoon!

Apple Butter Financiers
These almond brown butter mini cakes smell divine and truly taste like Christmas. They are bite size and perfect to share (or not).
Equipment
Ingredients
- 10 tbsp (150 g) butter (melted)
- 3/4 cup (170 g) confectioner sugar (sifted)
- 3 tbsp (50 g) flour (sifted )
- 2 tbsp (30 g) hazelnut flour
- 2/3 cup (70 g) almond flour
- 2/3 cup (150 g) egg whites
- 1/2 tsp vanilla paste
- 20 tsp apple butter
Instructions
- Preheat oven at 350F/180C.
- Place butter in a small sauce pan and heat on medium until melted. Then, continue to heat until there are no more bubbles coming up and the whistling has reduced (about 5min). Pass your brown butter through the sift. Set aside.
- In a mixing bowl, whisk together confectioner sugar, flour, hazelnut and almond flour.
- Using a spatula carefully fold in the egg whites and vanilla paste.
- Finally, add the melted butter, and whisk gently until smooth.
- Place your Medium Tartlet Flexipan® Tray on the top of your perforated baking sheet.
- Then, pour your batter into the Flexipan® with the mini ladle.
- Add a teaspoon of apple butter in each wells.
- Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your financiers from 15min)
- Once your financiers are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy! Bon Appétit!
