Oven Baked Coconut Chocolate Waffles

Who does not love eating Waffles on the weekend right out of the waffle maker? I LOVE LOVE my All Clad® Waffle Maker but I have never liked the idea of eating a cold waffle when everyone was eating a warm one 🙂

I am so glad to have invested in the Waffle Flexipat® Tray as I am able to bake 8 waffles at the time. Preparation included, they are all ready in less than 30 minutes. And most importantly: I do not need to stay behind the waffle maker for 45 minutes 🙂

This recipe came straight from Justine (Just.In.Taste) one of my Guy Demarle Colleague in France. These Waffles turned out so deliciously, I had to share!

Oven Baked Coconut Chocolate Waffles

Ingredients
 

  • 3 eggs
  • 2 Tbsp (30 g) coconut sugar
  • 1 1/4 cups (160 g) flour
  • 3 Tbsp (40 g) coconut flour
  • 1/16 tsp (1 g) baking soda
  • 1/16 tsp (1 g) salt
  • 1 cup (230 g) sour cream
  • 2 Tbsp (30 g) coconut oil (melted)
  • 1 tsp (5 g) Coconut extract
  • 1/2 cup (100 g) Dark chocolate chips

Instructions
 

  • Preheat oven at 350F/180C.
  • Separate egg yolks from egg whites in two mixing bowls.
  • In the first mixing bowl, whisk together egg yolks and the rest of the ingredients at the exception of the chocolate chips (Coconut sugar, flour, coconut flour, baking soda, salt, sour cream, coconut oil, coconut extract).
  • In the second mixing bowl, whip the egg whites until stiff peaks. Then, using a spatula carefully fold it into your first preparation.
  • Then, gently incorporate the chocolate chips.
  • Place your Waffle Tray Flexipat® on the top of your medium perforated baking sheet.
  • Pour your batter into the Flexipat® using the mini ladle. Then, gently spread the batter with your offset spatula.
  • Bake for 15 minutes at 350F/180C. (Every oven heats differently, monitor your waffles from 12min)
  • Take your waffles are out of the oven and flip them onto your bonMAT™.
  • Bake for an additional 5 minutes at 350F/180C.
  • Once your waffles are out of the oven, let them cool down for about 1min. Then, Unmold, Serve and Enjoy! Bon Appétit!
