Mini Chocolate Tiger Cakes

My Esteemed Colleague Christele from across the Atlantic at Guy Demarle, created this recipe a while back. I completely fell in Love with it because it’s not only a very easy recipe to make but these little cakes will make everyone at your house happy. My only regret is that I had made only one batch LOL

Mini Chocolate Tiger Cakes

These Chocolate Tiger Cakes are a classic delicacy for the afternoon snack in France. Their texture being so airy comes from the egg whites.

Ingredients
 

  • 5 1/2 tbsp (80 g) butter (Melted)
  • 2/3 cup (80 g) flour (Sifted)
  • 1 tsp (5 g) baking powder
  • 1/2 cup (100 g) sugar
  • 1/2 cup (120 g) egg whites
  • 1/4 cup (50 g) Chocolate Sprinkles

WHITE CHOCOLATE FILLING

  • 1/2 cup White Chocolate Chips
  • 24 Cadbury Mini Eggs

Instructions
 

  • Preheat oven at 350F/180C.
  • Place butter in a small sauce pan and heat on medium until melted. Set aside.
  • In a mixing bowl, whisk together flour, baking soda and sugar.
  • Using a spatula carefully fold in the egg whites.
  • Add the melted butter, then the Chocolate Sprinkles gently whisk but do not overmix.
  • Fill your Pastry Bag with the batter and carefully pipe it onto each well of the Flexipat®.
  • Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your cakes from 15min)
  • Once your cakes are out of the oven, let them cool down for about 15min. Then unmold gently.

WHITE CHOCOLATE FILLING

  • Place the white chocolate chunks in your Small Round Flexipan®. 
  • Heat in the microwave for 30 seconds at a time.
  • Once out of the microwave, using your mini whisk, mix until smooth.
  • Fill your Pastry Bag with the melted chocolate and carefully pipe it into each well. Then add a Cadbury Egg. Let it set about about 1-2 hours. Enjoy & Bon Appetit!
