Healthy White Chocolate Banana Sponge
Do we all buy a bunch of bananas, and have 2 or 3 left which need a bit of Love?
Then, this recipe is for YOU! It’s the healthiest version of a banana cake you will find. There is no sugar added as we are using really ripped bananas.
This recipe is from Ka, she loves CrossFit and actually just moved to Dubai, where I used to live a few years back. It’s incredible how this city keeps on changing!

Healthy White Chocolate Banana Sponge
A super healthy Banana Sponge recipe with White Chocolate for an added treat!
Ingredients
- 3 bananas (Ripe)
- 3 eggs
- 3.5 oz (100 g) sour cream
- 4 oz (120 g) flour
- 2.5 tsp (12 g) baking powder
- 1 oz (30 g) White Chocolate (Chopped)
Instructions
- Preheat oven at 350F/180C.
- In a mixing bowl, mash 2 bananas together (Keep the 3rd one for decoration)
- Add, sour cream, eggs, flour and baking power. Whisk until smooth.
- Then, incorporate the white chocolate with the spatula.
- Pour your batter into the flexipan® by spreading gently until smooth.
- Add slices from the 3rd banana for decoration on top.
- Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your sponge from 20min)
- Once your sponge is out of the oven, let it cool down for about 10min. Then, Unmold, Serve and Enjoy!
