Halloween M&M’s and Marshmallow Chocolate Cake

Ingredients
CHOCOLATE CAKE
- 1/2 cup (40 g) unsweetened cocoa powder (Van Houten)
- 5 1/2 tbsp (80 g) sugar
- 1 cup (125 g) all-purpose flour
- 1 tsp (5 g) baking powder
- 1/8 tsp (0.75 g) salt
- 2 eggs
- 3/4 cup (175 g) heavy whipping cream
- 1/2 cup (110 g) Vegetable Oil
- 1 tsp (4 g) vanilla bean paste
- 1/4 cup (65 g) dark chocolate chips (Ghirardelli)
DECORATION
- 1 cup (235 g) Halloween M&M's (Cookies n' Screeeam)
- 3 Marshmallows (Extra Large)
- 1/4 cup (45 g) white chocolate chips (Melted)
Instructions
CHOCOLATE CAKE
- Preheat oven to 350F/180C. Place your Medium Round Flexipan® Mold on the top of your Medium perforated baking sheet.
- In a mixing bowl, whisk together all the dry ingredients (cocoa powder, sugar, all-purpose flour, baking powder and salt). Make a well and add the eggs. Gently start mixing inwards going outwards with your mini whisk. Add the heavy whipping cream, vegetable oil and vanilla bean paste. Mix until it is all incorporated. Fold your dark chocolate chips.
- Pour your preparation into the Flexipan®, flatten the batter if necessary with your spatula. Arrange your M&M's on the top of the batter.
- Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your chocolate cake from 18min). It is ready when the toothpick inserted comes out almost clean.
- Once your Double Chocolate Cake is out of the oven, let it cool down for about 10min. Then, Unmold and set aside on your cooling rack.
ASSEMBLY
- Once your chocolate cake has cooled down, slide it onto your service plate. Then, add a tablespoon of melted white chocolate and decorate with a marshmallow on top. Enjoy & Bon Appétit!
