Feta Cheese & Sun Dried Tomatoes Muffins

Feta Cheese & Sun Dried Tomatoes Muffins
Ingredients
- 3 oz (85 g) Sun dried tomatoes in oil (Sliced)
- 1 egg
- 1/2 cup (125 g) Yogurt (Europeen Style)
- 1 Tbsp (5 g) Oil from the Sun Dried Tomatoes
- 1/2 cup (60 g) flour (Sifted)
- 1/3 cup (45 g) corn starch
- 2 tsp (8 g) baking powder
- 1/4 cup (35 g) Feta Cheese (Crumbled)
Instructions
- Preheat oven to 350F/180C.
- On a chopping board, slice the sun dried tomatoes. Set aside.
- In a mixing bowl, whisk together Egg, Yogurt and the Oil from the Sundried Tomatoes.
- Mix in the flour, baking powder and corn starch.
- Fold the Sundried tomatoes and crumbled Feta Cheese. Mix until combined.
- Place your Fluted Flexipan® Tray on the top of your Medium Perforated Baking Sheet.
- Using your mini Ladle, scoop the batter into each well of your Flexipan®.
- Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your muffins from 18min)
- Once your Feta Cheese & Sun Dried Tomatoes Muffins are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy! Bon Appetit!
