These Feta Cheese & Sun Dried Tomatoes Muffins are easy to prepare and bake. They have so much flavor all together!

Ingredients
 

  • 3 oz (85 g) Sun dried tomatoes in oil (Sliced)
  • 1 egg
  • 1/2 cup (125 g) Yogurt (Europeen Style)
  • 1 Tbsp (5 g) Oil from the Sun Dried Tomatoes
  • 1/2 cup (60 g) flour (Sifted)
  • 1/3 cup (45 g) corn starch
  • 2 tsp (8 g) baking powder
  • 1/4 cup (35 g) Feta Cheese (Crumbled)

Instructions
 

  • Preheat oven to 350F/180C.
  • On a chopping board, slice the sun dried tomatoes. Set aside.
  • In a mixing bowl, whisk together Egg, Yogurt and the Oil from the Sundried Tomatoes.
  • Mix in the flour, baking powder and corn starch.
  • Fold the Sundried tomatoes and crumbled Feta Cheese. Mix until combined.
  • Place your Fluted Flexipan® Tray on the top of your Medium Perforated Baking Sheet.
  • Using your mini Ladle, scoop the batter into each well of your Flexipan®
  • Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your muffins from 18min)
  • Once your Feta Cheese & Sun Dried Tomatoes Muffins are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy! Bon Appetit!
