Farmer’s Apple Almond Tart

Don’t you love strolling through the different stands at the Farmer’s Market? Sometimes I wish I could buy from all of them. This time, we got so many apples which ended up in apple sauce and I had kept a few to make this Amandine Tart.

This creamy tart tastes like Frangipane but is much lighter than the original one. As usual, I used Lauren’s Recipe (@lolotambouille) because she makes it with heavy whipping cream instead of butter and I prefer it this way. Of course, you will find Lauren’s recipe right HERE!

Farmer’s Apple Almond Tart

This Almond Tart just tastes like Marzipan. It is so delicious with the baked apples I got from the Farmer's Market a few days ago!

Ingredients
 

HOMEMADE SHORTCRUST PASTRY (MAKES 1)

  • 2 cups (250 g) bread flour
  • 1 tsp (5 g) Sea Salt
  • 8 tbsp (115 g) butter (Softened, At Room Temperature)
  • 1 egg yolk
  • 3 1/2 tbsp (50 g) Bottled Water (At Room Temperature)

APPLE ALMOND BATTER

  • 4 eggs
  • 3/4 cup (150 g) Vanilla sugar
  • 2 cup (225 g) almond flour
  • 1 cup (240 g) heavy whipping cream
  • 1 1/2 green apple
  • 1 golden apple
  • 1/2 red apple

HOMEMADE SHORTCRUST PASTRY (MAKES 1)

APPLE ALMOND TART

  • Preheat over at 400F/200C.
  • Roll the shortcrust pastry on the Roul'Pat™, shape it to the Flexipan® with the help of the Cake Server Knife. Reserve in the refrigerator.
  • In a mixing bowl, whisk together the Eggs and Vanilla Sugar. Add the Almond Flour and Heavy Whipping Cream. Mix until smooth. Set aside.
  • Wash and pat dry your apples. Remove the core and cut them into thin slices.
  • Take your Flexipan® out of the refrigerator, lightly pierce the shortcrust pastry with a fork.
  • Pour your batter and arrange your apples on top, starting outward with the green apples, going into a circle, working your way to the center.
  • Bake for 25 minutes at 400F/200C. (Every oven heats differently, monitor your tart from 23min).
  • Once your Farmer's Apple Almond Tart is out of the oven, let it completely cool down before unmolding. Then, Serve with Vanille Ice Cream or as is. Enjoy & Bon Appétit!
