Chocolate Orange Waffle Cakes

Ingredients
ORANGE CAKE BATTER
- 3 eggs
- 1/3 cup (75 g) light brown sugar (Original recipe calls for 1/2 cup / 100g)
- 4 oz (115 g) Greek Yogurt
- 1 orange (About 1/4 cup Juice)
- 1 1/2 cups (185 g) flour
- 1/4 cup (30 g) corn starch
- 1 1/2 tsp (6 g) baking powder
- 5 tbsp (70 g) butter (Melted)
- 1 tsp (5 g) vanilla paste
CHOCOLATE COVER
- Orange Zest (2-3 tbsp from 1 Orange)
- 5 oz (140 g) chocolate milk chunks
- 5 oz (140 g) White chocolate chunks
Instructions
ORANGE CAKE
- Preheat oven to 375F/190C.
- Place butter in a small sauce pan and heat on low until melted. Set aside.
- In your mixing bowl, whisk together the Eggs and Light Brown Sugar until fluffy (About 3-4 minutes on medium high speed).
- Add the Greek Yogurt, Orange Juice and cooled Melted Butter.
- Place your Waffle Flexipat® Tray on the top of your Medium Perforated Baking Sheet.
- Scoop the batter into the Flexipat® (About 2 scoops per well). Use your Mini Offset Spatula to spread the batter evenly.
- Bake for 25 minutes at 375F/190C. (Every oven heats differently, monitor your cakes from 22min).
- Carefully, take your waffles out of the oven and flip them onto your bonMAT™.
- Bake for an additional 5 minutes at 375F/190C.
- While your waffle cakes are back in the oven, prepare your Chocolate.
CHOCOLATE COVER
- Put the Chocolate milk into the Mini Round Mold heat about 30 seconds at a time. Once almost melted, whisk with your Mini Whisk. Then add half of your Orange Zest. Repeat this step for your white Chocolate.
- Once your waffles are out of the oven, place them back into your mold. Let them set about 40 minutes in the refrigerator.
- Then, gently peel your Chocolate Orange Waffle Cakes and enjoy as is or with your favorite ice cream. Bon Appétit!
