Chocolate Cake Waffles

I have been waiting to bake these waffles since my Friend Lauren (Lolo et sa Tambouille) published them on her website.

They are a cross between a cake + a waffle and soooo Chocolatey, you will be delighted!

Chocolate Cake Waffles

These Vanilla Chocolate Waffles are amazing out of the oven with a drizzle of white chocolate ganache or reheated in the toaster later!

Ingredients
 

  • 1/2 cup (100 g) Dark chocolate chucks
  • 7 Tbsp (100 g) butter
  • 4 eggs
  • 3 oz (80 g) Vanilla sugar
  • 3 Tbsp (45 g) milk
  • 3/4 cup (100 g) flour
  • 1 1/4 tsp (6 g) baking powder

WHITE CHOCOLATE GANACHE

  • 1/2 cup (100 g) white chocolate chunks
  • 1/4 cup (60 g) heavy whipping cream

Instructions
 

  • Preheat oven at 350F/180C.
  • Place the dark chocolate chunks and butter in a microwavable bowl. Heat for 30 seconds at a time. Once out of the microwave, mix until smooth with your mini whisk.
  • Then, separate egg yolks from egg whites in two mixing bowls.
  • In the first mixing bowl, whisk together egg yolks and sugar until light and fluffy (about 2 minutes). Whisk in the milk, flour and baking powder. Finally, add your chocolate preparation. Mix until all incorporated.
  • In the second mixing bowl, whip the egg whites until stiff peaks. Then, using a spatula carefully fold it into your first preparation.
  • Place your Waffle Tray Flexipat® on the top of your medium perforated baking sheet.
  • Pour your batter into the Flexipat® using the mini ladle. Then, gently spread the batter with your offset spatula.
  • Bake for 18 minutes at 350F/180C. (Every oven heats differently, monitor your waffles from 15min)
  • Once your waffles are out of the oven, let them cool down for about 1min. Then, Unmold, Serve with a white Chocolate Ganache or as it. Enjoy! Bon Appétit!
