Preheat oven at 350F/180C.
Place the dark chocolate chunks and butter in a microwavable bowl. Heat for 30 seconds at a time. Once out of the microwave, mix until smooth with your mini whisk.
Then, separate egg yolks from egg whites in two mixing bowls.
In the first mixing bowl, whisk together egg yolks and sugar until light and fluffy (about 2 minutes). Whisk in the milk, flour and baking powder. Finally, add your chocolate preparation. Mix until all incorporated.
In the second mixing bowl, whip the egg whites until stiff peaks. Then, using a spatula carefully fold it into your first preparation.
Place your Waffle Tray Flexipat® on the top of your medium perforated baking sheet.
Pour your batter into the Flexipat® using the mini ladle. Then, gently spread the batter with your offset spatula.
Bake for 18 minutes at 350F/180C. (Every oven heats differently, monitor your waffles from 15min)
Once your waffles are out of the oven, let them cool down for about 1min. Then, Unmold, Serve with a white Chocolate Ganache or as it. Enjoy! Bon Appétit!
