Blueberry Lemon Buttermilk Waffles

This recipe is for Isabelle who I e-met on an amazing Facebook Group : tests de recettes entre blogueurs. This January 2023, it is her Birthday and on the group, as a blogger you can propose your blog where everyone can choose a recipe from ; or as a non-blogger you can choose a special ingredient. As per Isabelle request, I choose “A CITRUS RECIPE” ; which I hope she will like as much as I did! Joyeux Anniversaire & Bon Appétit!

Blueberry Lemon Buttermilk Waffles

These Blueberry Lemon waffles are devine and super fluffy thanks to the buttermilk. Enjoy them with some powdered sugar, it's delicious!

Ingredients
 

  • 1 1/2 cups (190 g) all-purpose flour
  • 1 Tbsp (12 g) baking powder
  • 1/4 cup (50 g) sugar
  • 1 egg
  • 1 lemon zest (From 1 Lemon)
  • 2 Tbsp (30 g) lemon juice
  • 1 cup (240 g) buttermilk
  • 2 Tbsp (30 g) avocado oil
  • 5 oz (145 g) blueberries

Instructions
 

WAFFLES PREPARATION

  • In a mixing bowl, whisk together all the dry ingredients (all-purpose flour, baking powder and sugar). Make a well and add the egg. Gently start mixing inwards going outwards with your mini whisk. Add the buttermilk, lemon zest, lemon juice and avocado oil. Mix until it is all incorporated. Fold the blueberries.
  • Scoop the batter into the Flexipat® (About 1 1/2 scoops per well). Flatten with your offset spatula. Do not hesitate to push down the blueberries.
    • Save

BAKE!

  • Bake for 15 minutes at 400F/200C. (Every oven heats differently, monitor your waffles from 12min).

  • Once your Blueberry Lemon Buttermilk Waffles are out of the oven, let them cool down for about 1min. Then, flip and serve. Enjoy with some powdered sugar on top or whipped cream. Bon Appétit!
