In a mixing bowl, whisk together all the dry ingredients (all-purpose flour, baking powder and sugar). Make a well and add the egg. Gently start mixing inwards going outwards with your mini whisk. Add the buttermilk, lemon zest, lemon juice and avocado oil. Mix until it is all incorporated.Fold the blueberries.
Scoop the batter into the Flexipat® (About 1 1/2 scoops per well). Flatten with your offset spatula. Do not hesitate to push down the blueberries.
BAKE!
Bake for 15 minutes at 400F/200C. (Every oven heats differently, monitor your waffles from 12min).
Once your Blueberry Lemon Buttermilk Waffles are out of the oven, let them cool down for about 1min. Then, flip and serve. Enjoy with some powdered sugar on top or whipped cream. Bon Appétit!
