Banana Cake with Corn Flakes

I discovered the beautiful blog of Michèle (@croquant_fondant_gourmand) through the fantastic Facebook Group tests de recettes entre blogueurs. This January 2023 our Group Challenge is to “HONOR ONE BLOGGER” who was picked randomly. I was looking for a different recipe to use my Bananas and was super excited to try this one! Banana Cake with Corn Flakes

I was so happy to try a new banana cake recipe because this Banana Cake is soooo good! Can you believe it has corn flakes inside?!

Ingredients
 

  • 7 Tbsp (100 g) butter (Melted)
  • 4 (470 g) bananas (Mashed | 16 1/2 oz | 470g)
  • 1 Tbsp (15 g) lemon juice
  • 3 eggs
  • 3/4 cup (150 g) sugar
  • 2 cups (250 g) all-purpose flour
  • 1 Tbsp (12 g) baking powder
  • 2/3 cup (75 g) hazelnut flour
  • 2 oz (60 g) corn flakes (Kelloggs)

Instructions
 

BANANA CAKE PREPARATION

  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • Mash all your bananas into a bowl. Then mix in the lemon juice so the bananas don't get dark. Set aside.

  • In a mixing bowl, beat the eggs and sugar together on medium-high speed until light and fluffy (about 4 minutes). Add the all-purpose flour, baking powder and hazelnut flour. Mix in the cooled melted butter. Then, carefully fold the corn flakes.

  • Pour your batter into your Flexipat®. Evenly spread with your spatula.

BAKE!

  • Bake for 50 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 45min). It is ready when the toothpick inserted is almost clean.

  • Once your Banana Cake with Corn Flakes is out of the oven, wait about 10 minutes before unmolding directly onto your cooling rack. Enjoy & Bon Appétit!
  • N.B. Once it has cooled down, wrap it in a cling film. It will keep its freshness longer!
